Abstract The mixed wheat and bocaiuva (Acrocomia totai) flour allow the development of new products to meet the consumer demand for foods with a healthy and functional appeal. Our study aimed to evaluate the physical-chemical and rheological quality of mixed flours during storage. Mixed flours with 10 and 20% replacement of wheat flour with bocaiuva flour were conditioned in impermeable films to water vapor, oxygen and light and stored at ambient temperature for up to 120 days. Flours were submitted to periodical physical-chemical and rheological analyses. Moisture stayed within the legal limit, and water activity was considered adequate to inhibit microbial growth. Titrable acidity increased in the first 30 days of storage. Adding 20% of bocaiuva to the wheat flour enriched the mixture with twice the carotenoids and higher total phenol content. The bioactive compounds showed a slight reduction during storage. The mixed flour can be indicated for elaborating bread, loaf, pasta, cakes and biscuits. The falling numbers point to the need for correcting the flour by adding enzymes to produce fermented foods.

A composição química da farinha de trigo e a presença de fibras afeta as características dos pães. Uma forma de contribuir com a prevenção de doenças crônicas não transmissíveis é através de alimentação saudável, incluindo grãos integrais na dieta alimentar e reduzindo as calorias de determinado alimento, substituindo a gordura. Assim, este trabalho tem como objetivo determinar a composição centesimal das amostras de farinha de trigo integral, refinada e as misturas entre elas; bem como os parâmetros farinográficos (absorção de água, tempo de desenvolvimento e estabilidade) das mesmas. Além disso, verificar volume específico, perfil de textura do miolo e análise de imagem de pães elaborados com 60% de farinha de trigo integral e com 3% de gordura ou com substituto de gordura. Os dados foram submetidos à análise de variância. À medida que aumenta o percentual de farinha integral, os teores de proteína, cinzas e fibra insolúvel alcançam valores significativamente maiores e a absorção de água fica maior na farinografia, bem como o tempo de desenvolvimento e a estabilidade. O amido modificado enzimaticamente utilizado na elaboração de pão com 60% de farinha de trigo integral funcionou como um efetivo substituto de gordura. O pão integral elaborado com substituto de gordura apresentou volume específico significativamente igual ao pão integral elaborado com gordura, porém com diferenças em relação a parâmetros do perfil de textura, maior firmeza e menor elasticidade além de maior densidade celular do que o pão elaborado com gordura.

Bread characteristics are dependent upon the chemical composition and fiber content of the wheat flour used. A healthy diet can help prevent chronic diseases, where whole grains and fewer calories from fat are components of a healthy diet. The aims of this study were to determine the centesimal composition of wheat flour samples (whole, refined, and flour blends) along with their farinographic parameters (water absorption, development time and stability) and also to verify the specific volume, crumb texture profile and digital imaging of bread loaves made with 60% whole wheat flour and 3% fat or fat replacer. Increasing the whole wheat flour percentage in the blends also increased levels of protein, ash and insoluble fiber. All the farinographic parameters were also increased. Enzymatically modified starch was found to be an effective fat replacer in whole wheat loaves. The loaves made using fat replacer had the same specific volume and higher cell density as those made with fat, but exhibited different texture profile parameters such as higher hardness value and lower springiness value.

A composição química do grão de trigo afeta as características funcionais tecnológicas e, juntamente com as propriedades estruturais e microscópicas, define a qualidade da farinha de trigo. Assim, este trabalho tem como objetivo caracterizar amostras de cultivares de trigo e respectivas farinhas, BRS Louro, BRS Timbaúva, BRS Guamirim e BRS Pardela, visando indicar a aplicabilidade tecnológica. As amostras das cultivares foram caracterizadas fisicamente quanto ao peso do hectolitro, peso de mil grãos, textura, umidade e atividade de água. As farinhas foram caracterizadas quanto aos aspectos físico-químicos, atividade de água, cor, composição centesimal, teor de amilose e identificação das gluteninas de alto peso molecular. As farinhas foram caracterizadas de acordo com aspectos reológicos, granulometria, farinografia, extensografia, número de queda, viscosidade, propriedades do glúten, panificação experimental, e quanto aos aspectos microscópicos. Os dados foram submetidos à análise de variância à análise de componentes principais. As cultivares BRS Timbaúva e BRS Guamirim possuem comportamentos que não permitem direcionar à aplicação tecnológica com tanta veemência. A cultivar BRS Louro possui características à elaboração de produtos com massa de glúten fraco como bolos, tortas e biscoitos e a BRS Pardela, adequada para produtos de panificação e massas em geral.

Functional and technological properties of wheat depend on its chemical composition, which together with structural and microscopic characteristics, define flour quality. The aim of the present study was to characterize four Brazilian wheat cultivars (BRS Louro, BRS Timbauva, BRS Guamirim and BRS Pardela) and their respective flours in order to indicate specific technological applications. Kernels were analyzed for test weight, thousand kernel weight, hardness, moisture, and water activity. Flours were analyzed for water activity, color, centesimal composition, total dietary fiber, amylose content and identification of high molecular weight glutenins. The rheological properties of the flours were estimated by farinography, extensography, falling number, rapid visco amylography, and glutomatic and glutork equipment. Baking tests and scanning electron microscopy were also performed. The data were subjected to analysis of variance and principal component analysis. BRS Timbauva and BRS Guamirim presented results that did not allow for specific technological application. On the other hand, BRS Louro presented suitable characteristics for the elaboration of products with low dough strength such as cakes, pies and biscuits, while BRS Pardela seemed suitable for bread and pasta products.

Neste trabalho, foi avaliada a substituição de 5, 10 e 15% de farinha de trigo por fécula de mandioca na elaboração de biscoito doce. Ambas, farinha e fécula, foram submetidas à caracterização físico-química, reológica e análise térmica diferencial (DTA). Os biscoitos produzidos foram comparados por meio de análises sensoriais e microbiológicas. O resultado da análise térmica diferencial não mostrou qualquer alteração no comportamento de gelatinização do amido. O teste de aceitação sensorial mostrou que a crocância foi o único atributo que apresentou diferença significativa, indicando a viabilidade técnica de substituição da farinha de trigo por 15% de fécula de mandioca.

This research evaluated the substitution of 5, 10 and 15% of wheat flour for cassava starch in sweet cookies production. Both, flour and starch were submitted to the physicochemical, rheological and differential thermal analysis (DTA). The produced cookies were compared through sensory and microbiological analyses. The DTA result didn´t show any alteration in the starch gelatinization behavior. The result of the sensory acceptance analysis showed that crispness is the unique attribute that presented significant difference, indicating the technical viability of wheat flour substitution for 15% of cassava starch.

Este trabalho teve como objetivo avaliar o uso simultâneo de ácido ascórbico e azodicarbonamida em produto de panificação e através da metodologia de superfície de resposta. As respostas do planejamento experimental (2²) foram: o volume específico e a pontuação total das características externas e internas do pão francês. A ação do ácido ascórbico no aumento do volume específico do pão francês teve efeitos significativos (p < 0,05 ou valores próximos) linear e quadrático. Para a azodicarbonamida verificou-se somente efeito quadrático (p < 0,05 ou valores próximos), e não houve qualquer efeito de interação entre os dois agentes oxidantes estudados. A aplicação de ácido ascórbico e azodicarbonamida em concentrações acima de 75 mg.kg -1 de farinha de trigo e 30 mg.kg -1, dentro dos níveis estudados, proporcionou a produção de pães franceses de maior volume específico.

The aim of this work was to evaluate the simultaneous use of ascorbic acid and azodicarbonamide in a bakery product by using the response of the surface methodology. The experimental design (2²) responses were the specific volume and total count of the external and internal characteristics of French bread. The action of ascorbic acid on the increase of the specific volume of French bread had significant linear and quadratic effects (p < 0.05 or near values). For azodicarbonamide, the quadratic effect was observed, and there was no interaction effect between the two studied oxidants agents. The application of ascorbic acid and azodicarbonamide using concentrations above 75 mg.kg -1 of wheat flour and 30mg.kg -1, considering the studied levels, provided French bread production with a higher specific volume.

O objetivo deste trabalho é comparar a solubilidade, a molhabilidade e a distribuição granulométrica de achocolatado em pó, submetido aos processos de: simples mistura; mistura e lecitinação (0,3; 0,5; 0,8 e 1% de lecitina de soja); e mistura, lecitinação (0,3; 0,5; 0,8 e 1% de lecitina ) e aglomeração. Ao comparar o produto obtido pelo processo de simples mistura com o lecitinado, constata-se que a presença da lecitina melhora a solubilidade do produto em todos os tratamentos utilizados. O processo de aglomeração, após a lecitinação, incrementa ainda mais a solubilidade do produto, determinada neste trabalho pelo índice de retenção - IR. Comparando-se o IR dos tratamentos estudados, foram obtidos os resultados: IRmistura = 2,65%; IR0,3%lec. = 2,07%; e IR0,3%lec.aglom. = 0,79%. Quanto à molhabilidade, observa-se que os produtos lecitinados apresentaram menores tempos em relação aos submetidos a simples mistura, e o processo de aglomeração proporcionou uma diminuição ainda maior destes tempos (t mistura = 8 min 16 s; t0,3%lec. = 4 min 33 s; t0,3%lec.aglom. = 3 min). Não se observou influência do processo de lecitinação sobre a distribuição granulométrica da bebida em pó. Já o processo de aglomeração ocasionou modificação significativa nesta propriedade.

The aim of this article is to compare the solubility, wettability and granulometric distribution of a cocoa powder beverage, which went through the following process: simple blending; blending and lecithination (0.3; 0.5; 0.8 and 1.0% of soy lecithin) and blending, lecithination (0.3; 0.5; 0.8 and 1.0% of soy lecithin) and agglomeration. Comparing the product obtained with the simple blending process and the lecithinated product, the conclusion is that the presence of lecithin improves the powder beverage solubility in all the conditions used. The agglomeration process, after lecithination, improves the solubility of the product, which was determined in this article using the retention index - RI. Comparing this parameter to the different treatments studied, the following results were obtained: RIblend = 2.65%; RI0.3lec. = 2.07; RI0.3lec.aglom. = 0.79%. Regarding wettability, it was observed that the lecithinated products had less time if compared to the powder that went through the simple blending process, and the agglomeration process reduced even more in these times (t blend = 8 min 16 s; t0,3%lec. = 4 min 33 s; t0.3%lec.aglom. = 3 min). No influence of the lecithination process in the granulometric distribution was observed. The agglomeration process caused a modification in this property.
